At Ithaca Organics, our connection to the community is at the heart of our brand. As a third-generation operation that originated as a dairy farm, we have a deep-rooted history in the Finger Lakes region.

In 1997, Trever Sherman launched Ithaca Organics, initially focusing on wholesale organic produce for local stores and restaurants.

“2005
Ithaca Organics becomes a member of the Ithaca Farmers Market, establishing itself as an Ithacan staple for the following decades.”
“2008
Launch our CSA providing weekly organic produce boxes for our local community.”
“2010
Trever and his brother open the farm store, offering organic produce, local meat, and homemade cheese from his brother’s dairy farm.”
“2018
We launch our first line of certified organic CBD products, selling them online, in local stores, and farmers’ markets.

“2021
With the legalization of cannabis, Ithaca Organics is granted one of the first provisional licenses in New York State to cultivate cannabis. Since then we have launched our small-batch cannabis brand across New York State dispensaries, delivering premium Finger Lakes-grown cannabis cultivated through organic practices.”
“2024
Ithaca Organics takes the year off from growing produce to focus on developing their cannabis farm, with plans to return to produce in 2025. During this time, they introduce new certified organic CBD products under the brand ‘Ithaca Organics Hemp Co.’”
